There’s nothing worse than being starving and rummaging through the pantry to try and find something remotely healthy right?

I mean, sometimes we have ZERO desire to make a full on meal more or less sit down and enjoy it.

I’ve made a goodie that I highly recommend for anyone that’s trying to eat better, cut out processed sugar and get more fiber in their tummies.

Below are my homemade Lean Out Cookies that are super simple, quick and easy to make with very minimal ingredients.

Here’s what you need:

2 cups old fashioned oatmeal

1/2 cup almond butter

4 bananas (they don’t have to be fully ripe)

A shake or two of salt

A few shakes of stevia or a few packets to your liking

A pinch of cinnamon and nutmeg (optional)

1 tsp backing powder 

A splash of vanilla extract

Preheat oven to 375 and mix together oatmeal, almond butter and bananas until creamy and smooth.  I will use my fingers so I can coat the oatmeal better.  (Yes, it can get messy but there’s nothing better than licking the residue off our fingers right?!)

After mixing the above, add salt, stevia, cinnamon/nutmeg, baking powder and extract.  Mix again.  Spoon out onto a non stick pan or I use wax paper with coconut oil spray.  Bake for 12-15 minutes, depending on your oven temperature.
