We all are on a time frame when it comes to cooking these days but the last thing we want to do is go through the nasty Mcdonalds drive-thru.
I had some time in the kitchen today and really wanted to create a new dish that was healthy, quick and yummy and I came up with this awesome dish. Coconut Curry Chicken. It takes about 45 min to prep and cook (the prep takes the longest) but if you have a partner you can knock it out in 20 minutes. The flavor is fantastic and the best part is that it’s super healthy and guilt-free!
Here you go….
First you will need
1 TBSP vegetable oil (I used sesame oil)
1 LB bone less, skin less chicken breasts cut into bite size pieces
1 TSP grated gingerroot (I just got the ginger root in the spices section, much easier and it’s powdered form)
2 TSP grated lime peel (I just got a lime and used a cheese grater)
1 clove garlic finely chopped
2 fresh serrano chilies or 1 jalapeno chili seeded and finely chopped
1/4 c finely chopped fresh cilantro
1 can coconut milk (I got the lite)
1 TSP packed brown sugar
1 TSP salt
1/2 TSP soy sauce (I got the organic, light. No MSG and other fillers)
1.5 c sugar snap pea pods
1 medium green bell pepper cut into 1-inch cubes (get an organic pepper. the conventional are very high in pesticides)
1 medium tomato chopped
1 TBSP chopped fresh basil leaves
Hot cooked jasmine rice (I found some in a packet you can toss in the microwave that cooks in 2 minutes)
In nonstick wok or 12-inch nonstick skillet, heat oil over high heat. Add chicken and cook until there is no longer a pink center. Add lime peel, gingerroot, garlic, chilies and cilantro, stir fry for 1 min or so.

Then I poured the coconut milk in with the chicken and stirred the brown sugar, salt, soy sauce, pea pods and bell pepper. I reduced the heat to medium and simmered uncovered for about 3-5 minutes until the veggies were crisp and tender and stirred in the tomato last.
Heat the jasmine rice in the microwave and serve with the chicken in large bowls and add the fresh basil on top for a delish meal!! Bon Appetit!
