I was bored and felt like doing something in the kitchen on this rainy evening so I decided on these guys…..

My friends often joke that if I had a Spirulina bar or a cookie staring at me, which would I choose? Typically my go-to would be the Spirulina, but the cookie would taste a hell of a lot better if I’m honest with myself. 🙂

I thought about it and wondered what I could make that tastes decent, healthy, paleo-friendly, wheat/gluten and dairy free so I came up with this random concoction. It’s decent, nothing to brag home to mom about, but it gets the job done when you want something that’ll stabilize your blood sugar, reduce cravings and it’s small enough to nosh on in between road rides or clients.

So here ya go….enjoy and let me know if it fits your fancy. 🙂

Ingredients:

2 eggs (organic)

2 scoops protein powder

1 tsp spirulina powder (optional)

1 tsp MCT oil (optional) or 1 tsp coconut oil

1 tsp almond butter

3/4 can of pumpkin

1 tsp cinnamon

1 tsp honey

1 small banana

Preheat skillet on medium heat.

Mix the eggs, protein, pumpkin and cinnamon in a bowl until creamy. (add spirulina if you so choose! just a heads up, make these without the powder first as they are an inquired taste with the powder!)

Add the coconut oil or MCT oil on the pan and create small pancakes.

Be careful when flipping because they can get a little flaky.

Feel free to top with the almond butter, banana, honey, coconut oil for flavor! Yum!!!
